### How do I price a menu item for my restaurant?

Add up all costs for the dish (ingredients + labour + overhead share), then divide by (1 minus your target profit margin). For example, if total costs are €5 and you want a 65% gross margin, the selling price is €5 ÷ (1 - 0.65) = €14.29.

### What profit margin should a restaurant aim for per dish?

Most restaurants target a gross margin of 65–75% per dish (meaning total food and labour cost of 25–35%). Net profit after all overheads is typically 3–9% of revenue for a healthy restaurant.

### Should I include VAT in my menu prices?

In most EU countries, menu prices displayed to customers must include VAT. Calculate your base price first, then add your VAT rate on top. For example, a €10 base price with 23% VAT = €12.30 customer-facing price.
